Bonus: My favorite butternut soup recipe:

Ingredients:

  • 1 medium butternut squash, peeled, seeded, and cubed

  • 1 tablespoon olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 4 cups vegetable broth

  • 1 teaspoon ground cumin

  • 1/2 teaspoon ground cinnamon

  • Salt and pepper to taste

  • Optional toppings: toasted pumpkin seeds, a drizzle of coconut milk, fresh herbs

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until they become soft and translucent.

  2. Add the cubed butternut squash to the pot and cook for a few minutes, stirring occasionally, to enhance its flavors.

  3. Pour in the vegetable broth, cumin, cinnamon, salt, and pepper. Stir well, then bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 20-25 minutes, or until the butternut squash is tender and easily mashed with a fork.
